Title: Clover Honey

Im going to try making this in the next few days..

ngredients:

    * 60 fresh white clover blossoms
    * 40 fresh red clover blossoms
    * 3 tablespoons wild rose petals
    * 5 pounds sugar
    * 3 cups water

Directions:
Wash clover and rose petals throughly in cool running water; drain well. Pat dry. Place in a large metal bowl; set aside.
    In a large heavy saucepan, bring sugar and water to a boil, stirring constantly. Boil without stirring until a candy thermometer reads 220; remove from the heat. Pour over clover and rose petals; let stand for 45 minutes.
    Pour through a double thickness of cheesecloth; discard clover and rose petals. Pour honey into jars; store in the refrigerator. Yield: 4-1/2 pints.

I just finished a batch.. I doubled the flowers.. and would probably increase them again double, if I do it again.  Beautiful honey color..

Not exactly honey.. but fun just the same.

Im going to try a batch with just roses.

can't you use honey instead of sugar?
They do boil supermarket honey, but I would think that might destroy some of its beneficial properties.

Michael you can heat honey to infuse with different flowers and herbs without spoiling it.   So long as you don't over heat (boil or pasteurize) it's still got all of its nurtional benefits.

I'm a big fan of honey.
