Avocado Dip

Not quite guacamole, though I'll mention it.

Single serving:

1 ripe avocado, cubed
Lemon or Lime juice splashed
1/2 green onion/scallion
hefty teaspoon mayo
light dusting of paprika
light dusting of salt

Mush it all up and dip it with tortilla chips.
 :) Yum

(Finely diced tomato would also be good mixed in, but then I want to add a teensy bit of garlic.)


Upgrade to guacamole:
Add
Small jalapeno pepper, finely diced
Tablespoon cilantro
Dusting of chili powder and a tiny smidge cumin

(Multiply ingredients per number of servings.)

I always add some freshly minced garlic to my guacamole'.   ;D

Also nice to add is a bit of salsa....
