Summer style

Being in the mid of summer here... a fav salad of mine for those hot African days!

Fresh baby spinach leaves
Can of mandarin oranges in own juice (not syrup)
Handful pecan nuts
Spoon of real mayo (can substitute with bulgarian yogurt)
Curry powder
dash of salt and pepper

Place spinach leaves in bowl; add the drained mandarin. To the mandarin juice, add some mayo (or yogurt), curry powder, salt and pepper. Blend well till creamy. Pour over spinach leaves, toss, and leave for a while to absorb. Garnish with pecans.

Very yummy and refreshing!

Oh!  I have a favourite version of this, too.

Baby Spinach leaves
Walnuts (optional)
Strawberries, quartered.

The dressing:
2-3 egg yolks, whisked
Olive oil, drizzled in slowly, till the mix becomes thick like mayo
fresh squeezed lemon juice to taste, this thins out the dressing
dill, fresh or dried
dash of s and p

Drizzle dressing over spinach leaves, toss lightly then add strawberries and walnuts.   Yummy flavour combinations, especially if the strawberries are a tiny bit tart!

I love fresh baby spinach.. in any form!! Interesting taste, the strawberries.. will try that out!

Sounds great!

I invented it by accident one day.  Was having spinach salad for a special detox diet I was on and my strawberries touched my salad....

They fell in love instantly~!

Almonds instead of walnuts
and some kind of goat cheese

I stumbled across a new version of this recipe today.

The ingredients:

Baby spinach leaves
Sweet and sour dressing
honey roasted walnuts
thinly sliced red onions

The Dressing:
Two to three tablespoons of raspberry jam or jelly
Equal amount of red wine vinegar
Equal amount again of olive oil
teaspoon of fancy mustard, eg dijon
salt and pepper to taste

Whisk above ingredients together until blended well.   Set aside, no need to refrigerate.

Honey roasted walnuts:
One egg white
2 tablespoons honey
S & P

Whisk egg white in small bowl, slowly add the honey, whisking constantly.
If you like, add some cinnamon or clove, nutmeg to taste depending on how adventurous you
are feeling.   Roast in a 350 degree oven until nicely toasted, about 15 minutes.  Let cool.

Once walnuts have cooled some, toss baby spinach in a large bowl with dressing and slivers of onion.   Top with walnuts and a few more slivers of  onion.

Mmmmm!
