It's Apple Season!

September,  harvest time brings lots of delicious and nutritious fruits and vegetables to our tables.    Apple Season is one of the favourite seasons because apples are so versatile,  inexpensive and everyone loves them.

Apples are part of the Rosaceae family. There are over 7000 varieties of apples all over the world. They are grown in a temperate climate across the world and have been for more than 3000 years!


There are many varieties of Apples and some can be used with specific recipes in mind  Below is a list of Apple varieties and their uses:

Applesauce or Canning: Golden Delicious, Paula Red, Rhode Island Greening and Spartan.
Baked: Braeburn, Gala, Gravenstein, Rome Beauty and York Imperial.

Pies: Granny Smith, Jonagold, Macintosh, Northern Spy, Romes and Winesap.

Raw or Fresh Juice: Baldwin, Braeburn, Cortland, Criterion, Fuji, Gala, Golden Delicious, Granny Smith, Gravenstein, Jonagold, Jonathan, Lady Apple, Macoun, Macintosh, Newton Pippin, Northern Spy, Pink Lady, Red Delicious, Rhode Island Greening, Stayman, Winesap, and York Imperial.


Because of all the varieties available from all over the world, apples are available all year round, with a peak season from September to November.

Select firm and bright colored fruit with smooth and shiny skin. Avoid bruised, soft or shriveled fruit. It should have a fresh scent. The color of the apple depends on the variety, from yellow to red. Also, the sweetness or tartness ranges on the variety as well.

Storage: Keep at room temperature for a few days. Place unwashed fruit in a plastic bag in the refrigerator for a longer period of time. If you prefer crisp apples, then apples will maintain their crispness better in the refrigerator.

Spices: Allspice, cardamom, cinnamon, cloves, coriander, ginger, mace and nutmeg.

Preparation: Depending on how you enjoy your apples, they can be eaten with the skins on or off!  If you are slicing them to be eaten later,  dip them in a little water with lemon juice added to keep them from oxidizing (turning brown).


Apples are such commonly-consumed fruits that it's easy to overlook their amazing and unique health benefits. Apples combine certain nutrients in a way that sets them apart from all other fruits and makes them a food of choice for achieving several health goals. Here's what apples can do for you when it comes to your health:


Apples help lower bad cholesterol and high blood pressure. They help protect the arteries and the heart. Apples also boosts good cholesterol, and help stabilize blood sugar. They have an ingredient that works as an appetite suppressant, and contains flavonoids that are cancer-fighting antioxidants.   Because of their high fiber content, apples can help relieve constipation, but applesauce helps relieve diarrhea! Apples also help remove plaque from our teeth.

Reduced risk of lung cancer in women,  has been associated with daily consumption of apples, and apples were the only specific fruit that showed this beneficial association with lung cancer. 

Unlike grapefruit, grapefruit juice, citrus fruits as a group, or fruits in general, apples have shown up in several studies as a significant way to lower asthma risk. In fact, apples have stood out amongst other fruits when it comes to general support of lung function and lung health. Flavonoids unique to apple - including phloridzin - are thought to play a potentially key role in the special ability of apples to support lung health.

They contain sufficient amounts of both Vitamins A & C are low in calories and have zero fat!

Old-Fashioned Apple Crisp

There are as many variations of this recipe as they are varieties of Apples,  but this one is an Old Fashioned favourite!


Ingredients
nocoupons
5 pounds McIntosh or Golden Delicious Apples
Grated zest of 1 orange
Grated zest of 1 lemon
2 tablespoons freshly squeezed orange juice
2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
For the topping:

1 1/2 cups flour
3/4 cup granulated sugar
3/4 cup light brown sugar, packed
1/2 teaspoon kosher salt
1 cup oatmeal
1/2 pound cold unsalted butter, diced


Directions
Preheat the oven to 350 degrees F. Butter a 9 by 14 by 2-inch oval baking dish.

Peel, core, and cut the apples into large wedges. Combine the apples with the zests, juices, sugar, and spices. Pour into the dish.  At this point I often like to add a little bit of grated fresh ginger,  so if ginger is your thing,  go for it!

To make the topping, combine the flour, sugars, salt, oatmeal, and cold butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed until the mixture is crumbly and the butter is the size of peas. Scatter evenly over the apples.

Place the crisp on a sheet pan and bake for 1 hour until the top is brown and the apples are bubbly. Serve warm

You may want to add,  rhubarb pears or your favourite berries to this dish for a bit of a variation and a tasty treat!

Top with Vanilla Ice Cream,  frozen yogurt or fresh Whipped Cream for an extra sinful taste sensation!

Apple,  Carrot and ginger Juice

This is my apple and carrot juice with a little kick!  This recipe is for use with an electric  extractor fresh fruit juicer as opposed to steamer-juicer.  As always,  you should use organic whenever you can,  but I realize that's not always possible or affordable.    When using non-organic fruits and veggies,  wash thoroughly first with lukewarm water. With this type of juicer,  there is no need to peel your fruits and vegetables,  the peels give nice colour to your juice and add nutrients as well.   The ginger can be peeled,  though.   When you're done,  clean-up is easy,  just discard the fiber in your mulch pile or compost!

This recipe is for one glass of juice,  but you can multiply depending on the number of people you are serving.


Apple-Carrot and Ginger Juice  is great if you feel a cold coming on.   You can double the amount of ginger,  if you like a little spice in your life -- this helps kick out a cold almost before it sets in!

Ingredients
1/4 inch fresh ginger (I use quite a lot more)
4 carrots, greens removed
2 apples, seed removed


Alternate ingredients pushing through the hopper of your juicer.   



Add a handful of parsley or watercress for blood cleansing properties.  (Cilantro is nice, too)

We've already discussed the health benefits of apples, and we know that ginger is great for a multitude of things such as aiding digestion, fighting nausea and lowering LDL cholesterol,  but the carrots in this recipe are extemely good for you, too. 

Carrot juice helps to reduce the risks of many different types of cancer including skin and breast cancer. The cancer-fighting properties of carrot juice are due to the high amounts of beta carotene. Beta carotene changes to Vitamin A in the body. Studies have connected Vitamin A with cancer prevention by its antioxidant properties that help eliminate cancer-causing free radicals in the body.

Deficiencies in Vitamin A can cause dryness and damage to the skin, nails and hair. Vitamin A also strengthens bones and teeth.

Carrot  juice is extremely beneficial for the liver due to Vitamin A's cleansing effects. Vitamin A reduces bile and fat in the liver. However, for the liver to reap the maximum benefits of Vitamin A,  carrot juice should be added as a regular part of one's diet since the liver can store Vitamin A.

Drinking carrot juice c an also improve eyesight due to Vitamin A creation in the body. Deficiencies in Vitamin A can lead to night blindness.


As a general rule,  the darker the color of the carrot, the more carotene it contains.   Many people find the taste of carrot juice enjoyable and surprisingly sweet. It does,  however have a high concentration of natural sugar, so those with diabetes should consult their doctor as to how much they can drink. Carrot juice is also good for reproductive health due to a high Vitamin E content.

This juice is  a wonderful way to get all of your recommended beta carotene intake.  (And then some).   Not to worry,  either -- you'd really need to drink a lot of carrot juice for your skin to turn orange!

Considering quitting coffee for a while.  Shall have to buy more fruits and veggies and make more juices.

Considering quitting coffee for a while.  Shall have to buy more fruits and veggies and make more juices.

Coffee does make one speedy - high levels of caffeine.
But it is healthy, as is chocolate. Always good to keep a balance.
