Delicious Autumn Dishes

I just made a delicious crock pot dinner.. absolutely to die for!

Autumn Spiced Pork Roast


Ingredients

1 small boneless pork roast
pinch of sea salt
cracked black pepper
4-7 new white potatoes
baby carrots
6 celery stalks halved
2 granny Smith apples,  cored and sliced
fresh grated ginger to taste ( I use quite a large chunk!)
fresh minced garlic 2 tbsp
2 tsp ground cinnamon
1/2 cup pistachios shelled
1/4 cup Catalina Salad dressing
1/4 cup white wine




What to do:
Sear Pork roast,  either in frying pan,  broiler or in the crock itself with butter.

When the meat is completely seared,  season with Salt and Pepper and whatever you normally put on meat and place inside crock.  I have a blend of dried peppers sea salt that I like to use.  Smear the minced garlic over top of the roast.

Next quarter about 6 new white Potatoes and stuff them around roast in your crock pot.   Also core and slice 2 granny smith apples and add them to pot as well. 
 Add some baby carrots,  celery stalks,  dollop of butter,  cinnamon and fresh grated ginger. 

Next,  top the entire menage with 1/4cup  catalina dressing,  and 1/4 cup white wine.
Sprinkle pistachios over the top half way through the cooking process.

Simmer in crock until potatoes are fork tender.



To serve, remove pork from casserole; slice and place on warmed serving plate.  Spoon juices from bottom of crock pot over meat and potatoes.  No need for gravy!

Accompany with oven baked sweet potato with butter, salt and fresh cracked black pepper and spiced apple cider.  Oven baked warm sweet rolls or fresh tea biscuits are a nice addition to this hearty and delicious Autumn meal.



For a sweet and tangy variation on this recipe,  dried cranberries can be added at the same time as the pistachios.
